Thai Inspired Marinade

This super simple Thai inspired marinade pairs perfectly with an array of meats and you may just have all the ingredients necessary, saving you a trip to the store. I often make a double batch, marinate a few things and freeze one or two items right in the marinade. Some things I would suggest using this with; pork tenderloin, flank/skirt steak, chicken and fish (although don’t leave the fish in for more than 30min).

Ingredients:

  • 2 cloves. Garlic (to taste – I like more)
  • 2 tsp. Ginger
  • 1T. Soy Sauce
  • 1 tsp. Red Pepper Flake (to taste – I like more)
  • 3 T. Lime Juice
  • 1 tsp. Lime Zest
  • 1 T. Sugar
  • ¼ cup. Scallions
  • ½ cup. Cilantro
  • ¼ cup. Peanut Oil

Directions:

Mix all ingredients together in a 1 gal. plastic zip top bag. Place meat in the marinade and refrigerate up to 6hrs. If the marinade sits too long the acidity from the lime can break down the protein and cause it to become mushy.
